Three more days to the big meal of the year! I call this week my Thanksgiving Marathon and I’m all outta steam before the race even starts so I’ve come up with a few ideas to take the load off my feet.

I realized what she was really up to!!! I should have known better especially after my sissy was so eager to give up her Thanksgiving crown. That’s okay, I’m not letting her off the hook on hooking up the best cornbread dressing ever! psssss…it’s the hardest part of the meal! Each year, I find better ways to prepare our favorite dishes by eliminating some of the steps our mama made to ensure we had a yumptious meal. We love peas!!! The creamy comfort taste of a tiny pea is worth every mouthful and this Purple Hull Peas recipe is southern comfort food without the fuss.

Don’t even think about sitting on the porch with bowl in lap and a bushel of peas to shell! Head to your freezer section at your grocer, grab some packages of frozen peas and a few more ingredients for a pot of love. Make this recipe ahead and freeze until Thanksgiving morning. unthaw in a pot on low heat. Easy peasy, right?

Purple Hull Peas

Ingredients

  • 2 to 3 packages of frozen purple hull peas
  • 1 smoked turkey wing, drum part
  • 1 medium onion, diced
  • 2 tablespoon olive oil
  • 2 cups chicken stock, already prepared
  • Salt and pepper to taste
  • Water

Instructions

  1. In a large Dutch oven, heat olive oil on medium heat. Add onions, saute until onions are translucent. Add a teaspoon of salt and ½ teaspoon ground pepper. Stir until blended. Add turkey drum and chicken stock. Simmer for 10 minutes. Add peas and enough water to cover peas. Stir, then place lid on pot and let simmer for 1 hour. Taste and add additional seasoning to taste. Continue to cook until peas form a light cream sauce. Remove from heat and allow the peas to cool completely, before freezing or enjoy immediately.
