Everything about this scrumptious dish, screams refreshing summertime. My family loves seafood so I chose salmon but any fish or shellfish would be delicious. 20 minutes is all you need to have this yummy meal on the table and that includes making the pasta. Grilled Salmon with Zesty Peach Sauce

Ingredients

  • 4 salmon filets skin on
  • 3 tablespoons hot pepper peach preserves (I used Robert Rothschild’s)
  • 1 fresh peach peeled and sliced
  • 1 teaspoon fresh chopped dill
  • 3 tablespoon butter
  • 1 tablespoon olive oil
  • ½ of a fresh lemon
  • Salt and pepper (easy on the salt and pepper)
  • Fettuccini egg noodles (or regular)
  • Fresh dill for garnish

Instructions

  1. Sauce
  2. Sauté preserves, peach slices, dill and 1 tablespoon of butter in a small sauce pan over medium heat until peaches are slightly tender. Remove from heat.
  3. Salmon
  4. Place salmon on a plate. Drizzle salmon with virgin olive oil. Squeeze lemon juice over salmon. Season with salt and pepper. Place ½ teaspoon of butter on each filet, flesh side up. Spray pan for grilling seafood with cooking oil. Place salmon skin side down on the grill then place grilling pan over heated outside grill. Cook until salmon is medium with some pink in the middle. Do not turn salmon. Remove from heat.
  5. Fettuccini
  6. Prepare noodles as instructed on package. Place noodles on plate. Add salmon filet. Add peach sauce to each filet. Garnish with a sprig of fresh dill.
