There’s nothing like a bowl of spicy chili on a cold winter’s day. Add a slice of buttermilk cornbread slathered with butter and you will have a bowl of southern comfort. I love to crumble my cornbread in my chili for an extra mouthful of pleasure. I remember those Wolf brand chili commercials back in the day, raving about a can of chili being delicious. Well, a can of chili is fine if you are famished and don’t have the time to make a pot of homemade chili but I can guarantee you it won’t be the same.

Chili is easy sneezy and all you need is a few ingredients to create a masterpiece. The beauty about chili is that you can put your own twist on the basic recipe. Here is my recipe and I have to admit, it is spoon licking good.

Ingredients:
1 large green bell pepper diced
1 large onion diced
2-3 tbsp. of chili powder (more if needed for flavor and spice)
1 tsp. red pepper flakes
2 tsp. cumin
3 cloves garlic minced
1 tsp. paprika
1 lb. ground beef
1 lb. ground turkey
1 28 oz. can of diced tomatoes
1 small can of tomato paste
2-3 cups of beef stock
Salt and pepper to taste
3 tbs. olive oil

Directions:

In a large Dutch oven heat olive oil on medium high heat. Add onion and bell pepper sauté until translucent. Add garlic and sauté for 1-2 minutes. Add ground beef and turkey. Cook meat, breaking up into pieces until brown. Add chili powder, cumin, paprika, salt and pepper. Mix well. Add tomatoes, paste and beef stock. Add red pepper flakes. Mix well making sure there is enough liquid for the chili to simmer. Turn heat to medium low, cover and cook for 45 minutes. Taste for additional spices if needed. Lower heat and cook for 15 minutes. Serve with cornbread or crackers, cheese and green onions.
