Just in time for Valentine’s Day, these cookies are sure to please your sweeties heart. Tea Cookies are wonderful because they are soft with crunchy edges. The shortbread cookie dough has simple ingredients and a snap to make. This recipe came with a teapot cookie cutter I found on one of my treasure hunts several years ago.

Every time I make these cookies using the teapot cookie cutter I am reminded of a sweet little girl named Paige who is no longer with us. My friends hosted a tea party to introduce their daughter’s to the joy of afternoon tea. Paige was about three years old at the time and the life of the party. She was full of questions on the proper etiquette and of course stole everyone’s heart with her bright eyes and adorable baby face. I am sure Paige is having tea and cookies in heaven.

Ingredients:
1 cup butter room temperature
2/3 cup sugar
1 egg
3 tsp. grated lemon zest
1 tbs. fresh squeezed lemon juice
2 1/4 cup sifted flour

1/2 tsp. ground nutmeg

Directions:
Cream butter and sugar. Beat in egg, lemon zest, juice. Add flour, nutmeg and mix ingredients until they are well blended. Chill dough for 2 hours. Pre-heat oven to 350 degree (F). Lightly flour surface and rolling pin. Form dough into a ball and roll 1/2 inch thick. Cut with cookie cutter and bake on a non- greased cookie sheet for 8-10 minutes or until barely colored around the edges. Place cookies on a wire rack and cool completely. Sprinkle with sugar or frost and decorate.

Frosting:
Melt Wilson’s candy melts in a double broiler. Frost cookies.
