#scones#scones
Bread is my comfort food. No matter how you slice it, I just love a hot biscuit slathered with butter, so when I was introduced to the English version of a biscuit, I fell in love. You can make scones sweet by adding fruit or savory with herbs and protein. I like the sweet ones filled with lots of fruit. Surprise your honey with a basket of scones and coffee on Valentine’s Day. Here is my all-time favorite recipe.

Enjoy,

MJ

Serves 8
What you need:
2 cups all- purpose flour
2 teaspoons baking powder
1/8 cup salt
1/4 cup sugar
1/3 cup cold butter, cut into pieces
1/2 cup whipping cream
1/2 tsp. vanilla extract
1 large egg
1 egg yolk
1 teaspoon water
½ cup raisins

How to:
Combine first four ingredients. Cut in butter with a pastry blender until crumbly.

Whisk together cream, egg and vanilla; add to flour mixture, stirring just until dry ingredients are moistened.

Turn dough out onto a lightly floured surface. Pat dough to 3/4-inch thickness; cut with a 21/2- inch round cutter and place on a lightly greased baking sheet.

Whisk together egg yolk and 1 teaspoon water; brush over tops of scones.

Bake at 425 degrees for 13 minutes or until lightly browned.

Serve hot with butter and marmalade.
