I believe potatoes are the #1 comfort food. Add some butter, seasoning and if you really want to hit it out of the park, pile on the cheese.

My favorite potatoes include but are not limited to fingerling, golden and new potatoes. Here is a recipe that will elevate you to “slap yo’ mama” status. This is the easiest potato recipe you will ever make and they come out crunchy and delicious every time.

Ingredients:
• 3 pounds small red or white potatoes
• 1/4 cup good olive oil
• 1 1/2 teaspoons kosher salt
• 1 teaspoon freshly ground black pepper
• 2 tablespoons minced garlic (6 cloves)
• 2 tablespoons minced fresh parsley
Directions:
Preheat the oven to 350 degrees F.
Cut the potatoes in half or quarters and place in a baking dish. Add salt and pepper. Add garlic and drizzle with olive oil. Toss until the potatoes are well coated. Spread out into 1 layer. Roast in the oven for 1 hour or until browned and crisp. Flip once with a spatula when potatoes start to get firm during cooking in order to ensure even browning.
Remove the potatoes from the oven, toss with parsley. Serve hot.
