When I first started blogging, I made a promise to share all things I love and that just about covers everything except snakes, mosquitoes and exercising. Snakes, I’m just plain scared. I’ve never been bitten and I don’t plan on it anytime soon. Mosquitoes? Well who likes a nagging buzz in their ear followed by a sharp prick of a needle? I know they serve a purpose but I have no idea what and finally, exercising! Believe me, I could certainly drop a few, well several pounds and I wake up every morning making a commitment to eat healthier. I also throw in a quick thought of climbing on my elliptical for five minutes but it’s located on the patio and that’s excuse enough for me “not” to follow through on that idea. I am taking baby steps and that starts with no going back for seconds, eating smaller portions and drinking lots of water. I’m working on the wine intake but the will power hasn’t quite kicked in. Having just one glass with dinner really seems to take the edge off an energizer-bunny day.

I just thought I’d cover that before I shared my famous meatloaf recipe. I bet by now you’re wondering what the heck does snakes, mosquitoes and exercising have to do with a tantalizing meatloaf recipe. Absolutely nothing, just sharing a few thoughts. I have been making this recipe for my family and friends for decades and I play around with the ingredients just for fun but the main ingredients are always the same and it comes out perfect every time. Aaron doesn’t mind hurting my feelings if he doesn’t like something I prepared but he gave me props on this meatloaf and your family will too.

Ingredients:
1 lb. ground meat (I used 90/10)
½ lb. ground sausage (I used Owens)
1 medium onion finely chopped
1 medium bell pepper finely chopped
1 small can of tomato paste
1 small can of tomato sauce
1 sleeve of saltine crackers finely crushed
1 egg
½ tsp dried oregano
Salt and pepper to taste
Directions:
Heat oven to 350 degrees. In a large bowl, combine sausage and ground beef. Mix well. Add egg, onions, peppers, paste, sauce, and crackers. Mix well. Add oregano, 1 tsp salt and ½ tsp of freshly cracked pepper. More if needed.  If you like a little spice, add ¼ tsp of cayenne pepper. Mix well. Place in a greased casserole dish, form into a loaf, some fresh sprigs of thyme (optional). Bake for 1hour or until meat loaf is starts to turn brown around the edges and is firm to the touch. Don’t over bake or it will become dry.
