Everybody is on a kick to shed a few pounds before the summer gets here and I’m included in that number even though I haven’t done a thing about it other than run my mouth about how I need to get going. You would think that a quick glance in the mirror would be all I need for encouragement…Not. I just keep changing outfits until I find one that looks and feels good on me. No worries, I will get it together soon but until then, I want to share this ten minute salad you can prepare for a few friends in a snap and they will feel good because this salad is not jammed packed with calories. I add fruit to make it healthier since there’s no nutrition in iceberg lettuce. Serve this salad with three crackers…okay four crackers some sparkling water and you’ve got a lite meal to share with friends.

Tip: Don’t stress about losing weight. Just focus on eating healthier and smaller portions. Start an exercise program like using a step counter to increase the amount of movement you do daily.

Tip: Keep salad fixins in the fridge for a quick meal.

Tip: Serve your meal on a cute plate it makes the food taste better.

Ingredients:
1 large iceberg lettuce cut into quarters
Bottled Bleu Cheese dressing (lite)
1 pint grape tomatoes
1 pint blueberries
8 olives
4 slices bacon microwaved and crumbled
freshly cracked black pepper

Directions:
Set wedge on a plate pour 1.5 tablespoon of dressing on top of lettuce. Wrap bacon in a paper towel and squeeze the grease out of the bacon. Sprinkle bacon over the dressing. Add others ingredients.
