We overdosed on mangos while vacationing in Costa Rica. I can’t seem to get enough of this tropical delight. Since I’ve returned from vacation, I’ve been buying mangos in every form imaginable like mango sorbet, mango fruit bars and fresh mangos.
I purchased a mango wedger from Pampered Chef a few years ago and ask myself “why did I buy this gadget when I don’t even buy mangos?” Clearly this purchase was a spontaneous one so I stored the cutter away until I recently discovered how to make Mango Salsa.

This recipe is so easy and refreshingly delicious, you will want to make it throughout the summer months and you won’t feel guilty because most of the ingredients are healthy. This recipe feeds 4-6 adults and stores well in the fridge for a couple days.
Tip: Dice veggies small and mango and avocado medium.
Tip: Serve with tortilla chips and a mouth-watering margarita.
Tip: Turn on some salsa music like Flamingo Soul and dance the night away.

Ingredients:
2 just ripe mangos diced
1 large avocado diced
1/2 cup red onion diced
1/2 cup yellow bell pepper diced
1 large jalapeño diced (remove seeds) add more for more heat
Juice from 2 limes
2 tbs. Chopped cilantro
Salt and pepper to taste

Directions:
In a large bowl; place all the ingredients. Add lime juice and toss. Season with salt and pepper. Serve with chips.
