The peaches I purchased at Cooper Farms almost didn’t make it to the freezer. They were so delicious, the hubs and I grab one every time we walked through the kitchen. I had just enough to freeze two bags for the winter and my family will thank me later when I pull that piping hot; bubbly peach cobbler out of the oven in January.

Storing peaches in the freezer is “easy as pie” (my favorite southern slang.) The hardest part is having enough will power to keep from eating them before you store them away. Try this easy method I used for freezing peaches for that snowy day this winter.

Directions:
Remove the skin from the peaches with a paring knife. Make an X at the end of the peach then follow the cuts to the other end of the peach. Remove the quarters and slice them in half; yielding eight slices. Place all the peaches in a large bowl and set aside. In a small bowl, squeeze the juice from two large lemons. (1/2 cup) set aside. Place a large pot of water on high heat and bring to a boil. Fill another large pot with iced cold water (add ice cubes) enough to cover the peaches. When the water comes to a boil, pour the peaches in the water and stir for 10 seconds. Drain the water and immediately place the peaches in the cold water (this stops the cooking process). Let peaches cool for 5-10 minutes then drain the peaches and place in a large bowl. Add lemon juice. Coat the peaches with the juice. Transfer the peaches with a slotted spoon, to a labeled freezer bag. Remove air, seal and store in freezer until ready to use.
