I love T.J.Maxx for all their home goods and I never leave the store without visiting the gourmet food section. I find the best bargains on gourmet products from all over the world, at a fraction of the cost. This is where I shop for all my extracts for baking, artisan pasta, peppercorn, biscotti, pasta sauce and whatever looks delish. I made a whirlwind stop by T.J.Maxx the other day looking for some blue and white pottery… Let’s just say I was looking for anything that I couldn’t leave the store without.

When I made my way to the food section, I loaded my cart with several bags of beautiful pasta to fill the pasta section in my pantry. I created this recipe on a whim for our ladies gathering.  If you missed my post on Ladies Night Out you can read about them here and here. This recipe is easy sneezy and takes 30 minutes from start to finish. I have to tell you I surprised myself with this scrumptious creation. Use your favorite stuffed tortellini to make this mouthwatering dish. Ingredients:
1 package of tortellini noodles (my noodles were stuffed with sun dried tomato and garlic)
1 cup grape tomatoes sliced
2/3 cup green onions diced (I mixed leftover red onions with the green onions)
2 cups sliced Eckrich sausage
2 tbs. olive oil
1 cup of good white wine
1 cup of fresh parsley chopped plus some for garnish
Salt and pepper to taste.
Directions:
In a large pot, bring water to a boil, add salt. Add noodles and cook until done. (Do not overcook). Drain and set aside.
While the noodles are cooking; heat olive oil in a large skillet. Add onions. Cook onions until translucent. Add a dash of salt and freshly cracked pepper. Add sausage. Sauté until sausage starts to turn brown. Add tomatoes. Sauté for 4-6 minutes. Add wine and stir to release the drippings from the skillet. Let simmer for 5-6 minutes until liquid reduces. Add parsley and pasta. Mix all ingredients well. Remove from heat and transfer to a casserole dish. Garnish with parsley.
