I sure hope you seafood lovers got a chance to read my post about our package we received in the mail filled with Alaskan fresh fish. If you missed the post be sure and read about our friend Heidi and her generous catch from her Alaskan fishing trip here. I know it’s selfish but we don’t plan on having company over to help us devour our stash. Instead, I’ll go to the market and buy fish when fish is on the entertaining menu. With two seafood lovers in the house, there’s no worry about this fish going bad around here.

The beauty of fish is that it’s ready in a snap. Sauté a few veggies and you’ve got a healthy meal in 15 minutes. Try this recipe with any type of fish and I’m sure you will love the flavor and fast prep on this no brainer dish.

Ingredients:
4 fish filets
Salt and pepper to taste
1 tbs. Herb seasoning
1 tbs. Fresh chopped basil
1 tbs. Fresh chopped tarragon
1 cup grape tomatoes
2 large squash sliced
1 medium onion sliced
2 tbs. Olive oil plus extra for the fish

Directions:
Place fish on a cookie sheet lined with parchment paper. Season fish with salt, pepper and herb seasoning. Drizzle with olive oil. Preheat oven to 400 degrees. In a large sauce pan, add two tablespoons of olive oil. Heat oil. Add onions and squash. Sauté until onions are translucent. Add herbs and tomatoes. Season with salt and pepper. Sauté until squash is slightly tender. Remove from heat. Place un-covered fish in the oven and bake for 7-9 minutes; depending on the thickness of the fish. Remove fish and serve immediately with squash.
