I hope all you parents, teachers and kids survived the first week of school, plus treated yourself to a batch of the Chocolate Chip Cookies I shared with you here. If that wasn’t enough yummy indulgence, how about these extra cookies I saved to make ice cream sandwiches?

I made four sandwiches, some to eat now and some to freeze for that sweet tooth fix that I’m known to have on a regular basis. I got the inspiration for these “easy as pie” cookie ice cream sandwiches from one of my favorite bloggers and when I made the Best Chocolate Chip Cookies, I knew I would hide a few from my men and surprise them with their favorite combination; cookies and cream.
#icecreamsandwiches#chocolatechipcookieicecreamswichesIf you feel a little guilt coming on from gobbling up one of these masterpieces, cut one in fourths and eat 1/4. I didn’t take my own advice. Instead, I ate half of one and let the guilt settle in later.

Ingredients:
8 chocolate chip cookies
1 pint of your favorite ice cream (I used Haagen Dazs, since Blue Bell is still on its way back to Texas)

Directions:
Flip four cookies over. Turn the ice cream on its side. With a serrated knife, cut one inch rings of ice cream while still in the carton. Remove the ring from around the ice cream and place the ice cream on the flipped cookie. Top the ice cream with another cookie. Squeeze slightly to bond. Repeat this process for the next three sandwiches. If the ice cream starts to melt, use a knife to mold it on top of the cookie. Open wide and taste the bliss or wrap the sandwiches in plastic wrap and freeze for later.
