Two of my favorite ingredients come together to create this quick and easy recipe; avocado and shrimp. I threw this yummy salad together in no time and you can too. This salad is all you need for a complete meal. I made three, one for me and one for each of my hungry men and they didn’t ask “Where’s The Beef” when they finished. Add this recipe to your quick fixes and you’ll be glad you did.

Ingredients: Makes 4 Salads
2 large ripe avocados
2 large ripe tomatoes
1 large bag of lettuce or mixed greens
1 small red onion sliced thin
2 stalks of celery diced
1 medium onion chopped fine.
1 bag of large shrimp(20-25 count)tails removed and deveined
Salt and pepper to taste
Balsamic Glaze for drizzle
2 tbs. Olive oil
1 tbs. Butter
1 tbs. fresh chopped dill for garnish

Directions:
The hubs deveined and removed the tails from the shrimp. I can’t stomach to do it. Season, shrimp with salt and pepper.
In a large sauce pan over medium heat, add oil and butter. Add onions and celery. Sauté until onions are translucent and celery starts to get tender. Add shrimp. Sauté just until the shrimp turn in color. Do not overcook shrimp. Remove from pan and let rest in a bowl. Assemble salad. Spread lettuce over plate. Add sliced red onions. Lay two thick slices of tomato on the greens and sprinkle with salt a pepper. Cut the avocado in half and remove the seed. Remove avocado from the skin. Cut a small slice off the bottom of the avocado so it will sit upright on the tomato. Place that yummy removed piece of avocado inside the avocado or eat it as a snack. Stuff the avocado with shrimp and sautéed onions and celery. It’s okay if some shrimp fall around the avocado. Drizzle with glaze and your favorite dressing. sprinkle dill on top. Yummylicious!!!
