I can’t believe we are heading into the last weekend of September! Time passes at the blink of an eye which confirms our need to seize every moment with thankfulness. Let’s face it, no one has a Supercalifragilisticexpialidocious day without a little effort and some positive brain power. I love to play around in the kitchen; it makes me happy and I love sharing recipes with you so grab your favorite beverage, a piece of chocolate and check out this meal I prepared for my family that will put a smile on anyone’s pie hole and best of all, it’s easy sneezy.

If you haven’t noticed by now, I lean towards easy recipes and basic cooking. I love advanced recipes and I get over zealous on rare occasions and hang out in the kitchen, preparing some of those gazillion ingredient show stoppers. Don’t forget the key word; “rare.” #bakedpotatocasserole#bakedpotatocasserole#bakedpotatocasserole#bakedpotatocasserole#alaskansalmon#alaskansalmon#alaskansalmon
Ingredients:
2 large salmon filets with skin on
Salt and fresh cracked pepper
Olive oil for potatoes and salmon
6 tbs. Butter
Fresh dill for garnish
4 large golden potatoes peeled and sliced thin
1 medium yellow onion sliced thin
Dash paprika
2 large broccoli crowns
1/2 cup water

Directions:

Potatoes: Pre-heat oven 350 degrees. Peel and thinly slice potatoes. Season potatoes with salt and pepper. Line a medium size baking dish with half of the potatoes. Layer the thinly sliced onion over the potatoes. Cover the onion with the remaining potatoes. Drizzle with olive oil. Place 4-6 tsp. of butter randomly on the potatoes. Sprinkle with paprika. Cover tightly with foil and bake for 45 minutes covered. Remove the foil and bake for 15 minutes or until tender. Increase the temperature to 400 degrees and switch oven to broil. Broil for five minute or until golden brown. Remove from oven.

Salmon: Place the filets in a baking dish with skin side down. Season with salt and pepper on both sides. Drizzle with olive oil. Place 1/2 tbs. butter on each filet. Bake on 400 degrees for 9-11 minutes. Remove from oven. Garnish with fresh dill.

Broccoli: rinse broccoli and place in a microwave safe container. Add water. Season with salt and pepper. Add 2 tbs. butter. Cover with plastic wrap. Make a few slits in the wrap. Place in the microwave for four minutes.
