I have been trying new ways to incorporate Kale into my meals and I came up with this simple recipe from ingredients already in my frig. I try to keep a variety of vegetables on hand to make sure I include this crucial food group in our diet. When you go to the market, grab a few squash, zucchini, onions, peppers (different colors) mushrooms, greens and any other vegetables you love.  Add a little salt and fresh ground pepper, olive oil and of course a tablespoon of real butter to create an entrée or side dish in 20 minutes. These veggies look so festive and believe me they are delicious. Serve this dish up tonight for a quick heart pleasing meal.

Ingredients:
1 medium red onion diced
1 bell pepper diced
2 yellow squash diced or moon shaped
2 bunches of chopped kale, big stems removed
1 tbs. butter
2 tbs. olive oil

Directions:
In a large sauté’ pan add olive oil and butter. Heat pan on medium until butter is melted and starts to bubble. Add vegetables, salt and pepper. Stir to coat vegetables with oil mixture. Sauté’ until veggies are tender. Note- add the kale first because it takes a little longer to cook.
