I can’t believe Christmas is four days away and its 70 degree in Texas. I had to pull out my flip flops because my feet were hotter than a firecracker in my Uggs. I was all set for a crispy cold Christmas with a roaring fire and hot cocoa. I even pulled out my snuggly holiday pajamas to lounge around the house all day.

Oh well, that’s how the weather is in Texas. It appears we won’t be dashing through the snow on Friday. I whipped up these Snowball Cookies since I’m Dreaming of a White Christmas. This was my first time making these cookies and all I can say is Yumo!

The recipe is easy sneezy and there’s no fighting with these snowballs. Make a batch for your family and friends and see how fast they disappear.

Ingredients: Yields 3-dozen

2 cups all-purpose flour
2 cups finely chopped pecans
1 cup butter; softened
1 tsp. vanilla extract
Powdered Sugar

Directions:

Pre-heat oven 325 degrees. Combine all ingredients except powdered sugar in a bowl. Mix well with a hand mixer. Shape dough into 1” balls. Place balls on ungreased cookie sheet. Bake 18 minutes or until very light brown color. The cookies should not be dark. Remove from oven and cool for five minutes. Roll in powdered sugar while still warm. Roll again when cookies are cooled.

Tip: The key to these cookies is rolling them twice in the powdered sugar.
