Hello Friends, I hope you are taking advantage of this extended weekend. I certainly am, starting with a bit of thrift store shopping, on Saturday. It never fails, when I plan a thrift store haul, I can never find a bargain or a treasure. Perhaps it was because I was suffering from tunnel vision or a wishful sunny day instead of the misty cold weather we are having right now. I spent several hours catching up on this series on Stars called, Outlander. Season three will be starting soon. Have you been watching this drama? It is chalked full of  romance and medieval mystery. If you love period movies/novels, you will be hooked. Since I had a little time on my hands, I whipped up this Spinach Quiche for breakfast, lunch and dinner.

You heard me; we will be grazing on this bad boy all day. Your family will love this recipe. If you prefer Quiche Lorraine, omit the spinach and add 1/2 lb. chopped fried bacon. It’s yum either way.

Ingredients:
1 pastry shell browned (I keep a stash of homemade pie pastry in the freezer)
1- 10 oz. package of frozen chopped spinach thawed and drained
1 cup shredded Swiss cheese (I diced up sliced Swiss cheese I had on hand)
1/3 cup minced onion
4 large eggs
2 cups whipping cream
1/2 tsp. salt
1/4 tsp. sugar
1/8 tsp. ground cayenne pepper

Directions:
Preheat oven to 350 degrees. Prepare pie pastry and place in a 9″ pie pan. Bake crust for 10 minutes to light brown. Remove from oven. Spread cheese and onions into pie shell. In a mixing bowl, beat eggs, whipping cream, salt, sugar and pepper until well blended. Add spinach and blend well. Pour into pastry shell. Bake for 35 to 45 minutes or until center is set.
