Friends, you know I come from a long lineage of coffee lovers. My grandmother (Mama) would start every morning with a cup and saucer, filled with her famous percolated coffee. The brew was so hot, she would have to pour her coffee in the saucer and sip from there. What you may not know is that I love a cup of tea almost as much. Coffee is my morning beverage, tea is my afternoon delight and I need want a glass of vino for my evening pleasure.

I’ve been making tea the wrong way for years so I did a little investigating and discovered the proper way to steep the perfect cup of tea. I still have plenty of tea bags for a lazy cup of tea but here’s the real deal.

Vintage tea infuser

Tea must be made in a china teapot. Fill the teapot with boiling water to heat the pot. Empty the pot. Place the tea leaves in the tea infuser,  1-teaspoon per cup of tea. Place the infuser inside the pot. The water must be boiling when you pour it in the pot. Place the lid on the pot and steep for 5 minutes. Pour into a china teacup and be sure to use the saucer for the sophisticated icing on the cake. I shared this recipe for heart♥ shaped tea cookies here.
