Baby, it’s cold outside! I think we’ve all had a taste of the North Pole over the last few days. I’m seeing pictures of snow all over social media. Friends up north, I hope you are staying warm and toasty. A winter wonderland is pretty but after a few days of wonder, cabin fever starts to creep through the walls. Hold on, spring is on the way. To take your mind off the freezing temps, ice and snow, head to the kitchen and whip up these scrumptious waffles.

I love waffles more than pancakes and that’s saying a lot since I grew up on homemade pancakes. When my taste buds wrapped around a mouthful of these homemade Real Belgian Waffles, I fell in love. These waffles are sweet enough to eat without syrup and they freeze well. Pop two of them in the toaster for a crunchy treat. Yummy Yum!

Yields-5 waffles

Ingredients:
2 cups all-purpose flour
1/2 cup sugar
3 1/2 tsp. baking powder
2 large eggs, separated
1 1/2 cups milk
1/2 cup butter, melted
1 tsp. vanilla extract

Directions:
In a large bowl, combine flour, sugar and baking powder. In a medium bowl, lightly beat egg yolks. Add milk, butter and vanilla; mix well. Stir into dry ingredients just until combined. In a separate bowl, beat egg whites with a hand mixer until stiff peaks form, fold into batter. Preheat waffle iron. Spray with cooking oil. Fill iron with batter and bake until golden brown.

Serve with fresh fruit and whipped topping. Add warm syrup and butter if desired.
