Hey Loves, January 2016 is in the history books. What a month huh? Putting away holiday decor, organizing homes, eating healthier and staying on a budget. I made commitments to all these topics and I must say I’ve improved on two out of four. I’m still coming off my holiday sweet tooth binge so I’ll update you later on my progress. Speaking of sweets, I made a delicious chocolate three layered cake and I will be sharing the video with you as soon as I re-bake the cake to complete the video. Friends, my cakes were purrhfect until I tried to remove them from the pans.

Omgoodness! The cakes would not come out of the pans. I started hyperventilating then I pleaded with the cake angels to help me get the darn cakes out of the new cake pans I just purchased. Still, No Go. I yelled for the hubs to help me. Why did I do that??? I was desperate I guess. I tried every trick in the book to get the cakes out of the pans. I even contemplated using a sledge hammer, okay, I’m exaggerating. I finally threw in the towel and proceeded to scrape the moist, fluffy cake out of the pans.

By now, the hubs was hovering over me with an “I can’t believe you messed up look on his face.” My verbal response was to dump the cakes in the trash but before I could finish my words, the hubs was to the rescue with his clever idea, “I know you not fixin to throw that cake away; can’t you make some cupcakes or something?” All this advice came in the middle of him filling his pie hole with a spoonful of crumbled cake. That’s when the light bulb came on and I said, “you’re right.”

I scraped the crumpled cake in a bowl, mixed some of the frosting in with the cake and placed cupcake paper liners in my muffin pans. I scooped an ice cream portion of the cake and placed it inside the paper liners, piped a bit of frosting on top and finished this masterpiece with chocolate sprinkles. “Voila” I present to you “Cake Cups!” My chocolate cake video and recipe will be coming soon, to a theatre near you.
