Hey Friends, how was your decluttering assignment I gave you over the weekend? Ha-ha, all kidding aside, I hope you had a super weekend filled with lots of love. My one day weekend ended up being amazing and I even squeezed in time to shop and cook. Now don’t start thinking I’m a Suzy Homemaker, I still have a pile of laundry on the bed that needs to be folded but I was determined not to let anything come between me and my Sunday afternoon nap, shopping and a yummy meal.

We love Mexican food in Texas. As a matter of my opinion, Mexican food is right up there with southern dishes and you know I’m a southern food girl.

This recipe is easy sneezy. Double the recipe to feed lots of hungry souls.

Serves 4
Ingredients:

1 pound ground beef
1¼ ounce package of mild taco seasoning mix
1 10 ¾ ounce of cream of chicken soup
1 8 ounce container sour cream
8 corn tortillas warmed in a skillet
1 small onion chopped
2 tbs. olive oil
1 cup shredded cheese (I mixed cheddar and Monterrey jack)
Garnish-ingredients below

Directions:
In a large skillet, heat olive oil. Add onion and sauté’ until onion is translucent. Add ground beef and stir until crumbled and brown. Drain the meat in a colander. Return to skillet and add taco seasoning. Add salt and fresh cracked pepper to taste; set aside. Stir together soup and sour cream. Spread half of the sour cream mixture into a lightly greased baking dish. Spoon beef mixture evenly down the center of each tortilla, roll up and lay the tortilla seam side down over the sour cream in the baking dish. Top with remaining sour cream mixture and cheese. Bake uncovered at 350 degrees for 25 minutes or until cheese is melted and dish is heated. Garnish with salsa, sour cream, cilantro, chopped tomatoes and green onions.

Tip: Add 2 ounces of green chiles to the ground beef for some spice.
