I hope you had a wonderful Easter celebration filled with family, friends and lots of delicious food. Ours was blessed with a wonderful morning church service and an afternoon spent with friends. My friend Sherry, host Easter dinner and I host Memorial Day. We have a group of friends who volunteered were voluntold to host a holiday gathering other than Thanksgiving and Christmas.

Everyone brings a covered dish to help with the meal. Afterwards, we play games and catch up on our daily lives. This Easter was no different. We, meaning the women, help the host put her kitchen back in order by cleaning and putting away the party goods. It’s so much fun because we all commence in the kitchen, put on our flip flops, pour a glass of wine or two and gossip while we work. It is also a wonderful way of giving thanks to the host for their hospitality. I made my no fail Bountiful Broccoli Salad.

Here is the recipe for this magical disappearing trick; your guest will love.

Serves 12 or more

Ingredients:
6 broccoli crowns, rinsed and drained
¾ cups red onion, diced
1 cup slithered or sliced almonds, toasted
1 cup Craisins
6 slices bacon fried and crumbled
1 teaspoon fresh cracked pepper
Directions:
Cut broccoli crowns into bite size pieces. Discard stalks
Place in a large bowl. Add remaining ingredients to the bowl.
Dressing:
Prepare, cover and place in the refrigerator overnight.
1 cup of granulated sugar
2 tablespoons apple cider vinegar
2 ¾ cups mayonnaise
Directions:
In a medium mixing bowl, mix the ingredients together. Blend well with a spoon.
Pour the dressing over the broccoli and mix well coating all the ingredients with the dressing. Transfer to a serving dish. Salad stores well for two days in the fridge.
