I hope you had a memorable spring weekend. I thought I’d have a fun free weekend but wouldn’t you know it, I ended up doing more than I planned. We had a Fish Fry fund raiser at my church on Saturday. I volunteered to help and you know what this “act of kindness” turned into; WORK! It was all good. We had fun and delicious crunchy fish for our efforts. Good thing the Fish Fry was Saturday because the rain came in shortly afterwards and it’s been a down pour ever since. This dreary weather has me in a cooking mood.

Even though it’s springtime, it looks and feels like fall. One minute I have on flip flops and the next, I’m reaching for my Uggs. I don’t know about you but I’m craving some comfort food to warm my insides which is all the more reason to pull out the pots and pans for some old fashion goodness like these Chicken Pot Pies I made for my men. This recipe is easy as “pie” and taste sooooo good! If you have left overs, which we never do, they freeze well.

My pie dough recipe can be found here. For this recipe you can also use store bought pie dough found in the freezer section at your grocer.
