Southern Living introduced this cake to its readers some time ago and I made sure I saved the issue simply because I loved the name. I thought, “this cake must be a show stopper with a name like that.” Well it sure is a delectable pound cake. The cake is ginormous and it is full of creamy butter. Get ready to hang around the kitchen for a few hours because this rascal takes a good 2 hours to bake and it’s worth the wait. I used almond extract the first time I baked the cake and found I prefer lemon or vanilla flavor more. You choose your extract and make sure it is real not imitation. One thing I know for sure, you can’t skimp on ingredients when it comes to baking. Baking is a science and the chemicals must be measured and combined properly to get the perfect end results. I shared my Chocolate Pound Cake recipe with a friend and she omitted a stick of butter because in her opinion, it would cause the cake to be too fattening. Needless to say, the cake was dryer than the sahara desert, so stick to the recipe and you will be a blue ribbon baker in no time. Enjoy,

MJ

Ingredients:

3 cups sugar

6 large eggs room temperature

4 cups all-purpose flour

3/4 cups milk

1 teaspoon almond extract

1 teaspoon lemon extract

1 pound butter softened

Directions:

Preheat oven to 300 degrees. Grease and flour a 10 inch tube pan. (Not a Bundt pan). In a stand electric mixer, cream butter for 7 to 8 minutes. Add your sugar slowly then cream for another 7 to 8 minutes. Add your eggs one at a time mixing just until the yellow disappears. Add your flour and milk beginning with the flour then adding some milk, interchanging and beating after each addition and ending with flour. Add your extracts and stir until just blended. Spoon the batter into the pan and bake for a minimum of 1 hour and 40 minutes. This cake took 2 hours in my electric oven. Check to make sure the cake is done by inserting a tooth pick in the center of the cake. If it comes out clean the cake is ready to come out of the oven.  Special note. I prefer a citrus taste so the next time I bake this cake I will use lemon or orange extract only .
