Brussels sprouts have been around forever but lately, they have become a staple vegetable on restaurant menus and in recipes. The first time I tried Brussels sprouts, I was not impressed because they were bitter and tasted nothing like the adorable miniature cabbage they resembled. I vowed never to try them again and that was 25 years ago. Since my taste buds have matured, I decided to give Brussels sprouts another try and to my surprise, they were delicious. I found that it is all in how they are prepared and once I learned about the nutritional benefits Brussels sprouts provide, I was determined to add them to my grocery list. I created this recipe which has a sweet and savory combination and it is delicious. If you are a fan of Brussels sprouts or you have never tried them, whip up this recipe. I think you will fall in love with the texture and taste. Grab a pound or two the next time you are at the market and serve them as a side dish with your next entrée.

Ingredients:

1 pound of Brussels sprouts cut in half

1 medium onion chopped

1/2 cup Craisins

1 teaspoon salt

1/2 teaspoon freshly cracked pepper

3 tablespoons olive oil

1 tablespoon butter

2 tablespoons light brown sugar

Extra olive oil

Directions:

In a large sauce pan, heat olive oil then add butter. Add brown sugar and stir until sugar dissolves. Add onions and sauté until onions are golden and caramelized, about 7 to 10 minutes. Salt and pepper Brussels sprouts and add them to the onions. Saute’  until the sprouts are tender about 15 minutes. Add Craisins and saute’ another 5 minutes. Add salt and pepper to taste if need. Note: you may need to add a little more olive oil to keep the Brussels Sprouts from sticking. Serve immediately.
