I have a crush on cherries! Bing or Rainer, I eat them like popcorn and cherries have been at their peak for a few weeks now. These little sweet and sour jewels, with their burst of flavor, curl up with me in the evening while I watch my favorite shows on the telly.

Not to mention their healthy attributes hiding behind their shiny skin like vitamin C, protein, calcium, potassium and iron…why not ditch the vitamin pack and eat more cherries? Just sayin!!

I love cherries in my salad too. I shared this recipe in one of my first blog post and I think this recipe is worth pulling out of the archives because it’s so refreshingly delicious. Add a few slices of rotisserie chicken on top and you’ve got a healthy meal. Have a Super Summer Weekend. Cherrio!

Cherry Bliss Salad

Ingredients

  • 6 large romaine lettuce leaves
  • 4 large kale leaves vein removed
  • 10 sun dried tomatoes julienne sliced
  • 1 small red onion sliced and cut in half
  • 12 large black cherries cut in half with seed removed
  • 1/2 cup flat leaf parsley lightly chopped
  • 10-12 thin slices of Gouda cheese
  • "!"Balsamic Dressing
  • 4 Tbs. Balsamic Vinegar
  • 1/4 tsp. salt
  • 1/4 tsp. onion powder
  • 1/4 tsp. dried basil
  • 1/4 tsp. dried oregano
  • 2 pressed garlic cloves
  • 1 Tbs. sugar
  • 3/4 cups olive oil

Instructions

  1. Salad
  2. Rinse, chop and spin lettuce and kale. Place in a pretty bowl. Add other ingredients and toss lightly with hands. Place Gouda cheese over salad and sprinkle additional parsley all on top.
  3. Serve with your choice of dressing or try my homemade Balsamic Vinegar Dressing
  4. Dressing
  5. Place all ingredients in an airtight container. Shake well. Refrigerate after use.
