We are seafood lovers around here and that’s good news because you will be seeing a lot of seafood recipes on mjonesstyle. Simple recipes, that don’t take a song and dance to prepare. The good thing about seafood is the fast cooking process. Over cooking fish is a death kiss. Most fish cook in 12 to 18 minutes depending on the thickness of the cut. I love salmon but my husband does not. He only likes fresh salmon, the sushi style so I always buy another type fish when I get ready to make a fish dish. You can make this recipe any night of the week and you will have dinner served in 30 minutes or less. I served this dish with Penne pasta mixed with kale. A quick toss salad works also as a side dish and a well balanced meal.

Ingredients:

3 or 4 fish filets

Salt and fresh cracked pepper

Olive Oil

2 tsp. fresh or dried dill

2 tbs. of butter

Capers and parsley for garnish

 

Directions:

Pat filets with a paper towel. In a shallow dish, arrange filets so they are not touching. Make sure you lay the skin side down. Salt and pepper both sides of the filets. Drizzle with olive oil. Sprinkle dill over filets. Slice butter into ¼ teaspoons and place on top of filets. Add a cute little caper. Place in 400 degree oven for 12 to 14 minutes depending on the thickness of filet. Remove filets from skin and serve immediately.
