Christmas is almost here! Yowza! Are you ready my friend? I have a couple more names on my Christmas list and I’m baking all sorts of yum this week for friends and family. I’ve also been partying like a rock star! I’m a lucky girl to have so many places to go during the holiday season and I try to make every invite because I know all the hard work and effort a host goes through to make a memorable gathering. This is true of my friends, Vonda and Monica, who host their Christmas Tea in my hometown.

Aren’t they cute a apple pie! The theme this year was Hollywood Glam! These ladies rolled out the red carpet and awarded us Oscars to make us feel like real movie stars. We played games and dined on the most scrumptious edibles.

I was so busy feeding my face that I almost forgot to snap pictures of this “to die for” Tuna Pineapple Salad, Festive Chicken Skewers, Potato au gratin soup, Spinach Quiche and don’t let me forget the dessert…drumroll, these incredible lemon and chocolate tarts.

I tried really hard to be ladylike and “not” go back for seconds but lemon is my favorite flavor and it’s Christmas time so why not!

Creamy Spinach Quiche

Ingredients

  • 1 pastry shell browned (I keep a stash of homemade pie pastry in the freezer)
  • 1- 10 oz. package of frozen chopped spinach thawed and drained
  • 1 cup shredded Swiss cheese (I diced up sliced Swiss cheese I had on hand)
  • 1/3 cup minced onion
  • 4 large eggs
  • 2 cups whipping cream
  • 1/2 tsp. salt
  • 1/4 tsp. sugar
  • 1/8 tsp. ground cayenne pepper

Instructions

  1. Preheat oven to 350 degrees. Prepare pie pastry and place in a 9? pie pan. Bake crust for 10 minutes to light brown. Remove from oven. Spread cheese and onions into pie shell. In a mixing bowl, beat eggs, whipping cream, salt, sugar and pepper until well blended. Add spinach and blend well. Pour into pastry shell. Bake for 35 to 45 minutes or until center is set.
