Soft Buttery “Shuga” Cookies

Ingredients

  • 1 cup butter softened (room temperature)
  • 1 ½ cups sugar
  • 1 egg
  • 2 ¼ cups all purpose flour
  • ½ tsp. baking powder
  • ¼ tsp. salt
  • 1 tbsp. vanilla
  • Sugar crystals for garnish

Instructions

  1. Use paddle attachment to a mixer. Cream butter and sugar. Add egg and vanilla. Mix until just combined. Add dry ingredients and mix until incorporated. Remove dough from bowl and form two round saucers. Cover and store in refrigerator for a minimum of 2 hours. Preheat oven to 350 degrees. Remove dough from fridge and cut in half. Lightly coat dough with flour. Place on a floured surface and roll dough to ¼ inch thick or preference. Cut with cookie cutter and place on a cookie sheet. Bake for 8 minutes. Do not over bake these cookies. They will be light in color. Removed cookies from oven and add sugar. Allow cookies to rest on the sheet for five minutes then transfer to a cooling rack.
