This would be an easy task but I had a very difficult time narrowing down my favorite things since I practically love everything except snakes and butter beans! Snakes for the obvious reasons and butter beans because my Mama forced me to eat a whole bowl of them when I was little. My loves are in no particular order of preference, that would be normal and normal is not me. I love the flavor of lemon! Cakes, pies, lemonade, cookies, you say pucker up and I come running so today, its all about the flavor and scent of lemon and this means ditching my diet just for you! 🙂

Today, I’m re-sharing my all time favorite Luscious Lemon Bars recipe, packed full of thirst quenching lemon flavor. I also love the fresh citrus smell of lemon, especially in the kitchen so I keep a supply of Mrs. Meyers Lemon Verbena kitchen products right by my sink. Luscious Lemon Bars

Ingredients

  • 1 1/2 cups plus 3 tablespoons unsifted flour
  • 1/2 cup powdered sugar
  • 3/4 cup cold butter cut into small pieces
  • 4 eggs, slightly beaten
  • 1 1/2 cups granulated sugar
  • 1 tsp. baking powder
  • 1/2 cup ReaLemon (lemon Juice from concentrate)
  • Additional powdered sugar for garnish

Instructions

  1. Preheat oven to 350 degrees. In a medium bowl, combine 1 1/2 cups of flour and 1/2 cup powdered sugar, cut in butter until crumbly. Press onto the bottom of lightly greased 13×9-inch baking pan. Bake for 15 minutes. Meanwhile, in a large bowl, combine eggs, granulated sugar, baking powder, lemon juice and the remaining 3 tablespoons of flour. Mix well. Pour over baked crust. Bake 20-25 minutes or until lightly browned. Cool. Cut into squares/bars. Sprinkle with additional powdered sugar. Store covered in refrigerator.
