If you’ve been following my blog, you are well aware that I just returned from a wonderful trip to Europe where I visited three countries. Italy is known for their pasta dishes and boy do I love pasta. I belong to a travel group and prior to us leaving for Europe, we met to discuss our plans. Everyone was encouraged to bring a dish that represented the countries we would be visiting so I decided to make this Ravioli Salad recipe. It’s a simple yet delicious dish that can be served as a main course. One of the reasons I love Europe is because they love to dine al fresco and this dish is perfect for outdoor entertaining. Enjoy.
Ingredients
4lbs of ravioli (mixed)
½ cup sliced almonds toasted
½ cup ocean spray craisens
1 cup pesto
1/2 cup olive oil
¾ cup feta cheese
Salt for boiling pasta
2 quarts water
Small sprig of fresh basil rolled and sliced for garnish
Directions
Bring water to a boil. Add salt. Add pasta and cook for 7-8 minutes or until done. Do not over cook pasta. Drain and transfer to large bowl. Add olive oil and pesto and toss to coat pasta. Add other ingredients and toss gently. Transfer to serving dish. Garnish with basil. Serve hot or cool.
