My girlfriends are showering me this weekend with a “granny” baby shower for my first grand baby! When they told me they were planning a shower for me, I was so excited because I’d never heard of a “granny aka Lolli baby shower and I’m the guest of honor at the party and you know I love gatherings! Apparently, granny showers are the new “in” thing especially for grandmas who go gaga over their grandchildren.

The best part about this party is…I don’t have to do a thing. I love a party without all the planning and my friends know how to party. Several of my family and friends live out of town so I’ll have a house full of overnight guest who love coffee and cake for breakfast. I need a quick recipe that compliments a cuppa coffee and this one from my recipe vault is perfect.

This bread is delicious and can be baked and frozen in advance. Set the covered loaves out overnight, slice and zap in the microwave right before serving. Yum!

Luscious Lemon Bread

Ingredients

  • 6 tbs. Butter softened
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • Zest of one lemon
  • 1 1/2 cup all-purpose flour
  • 1 tsp. baking powder
  • 1/2 cup milk
  • Juice of 1 lemon

Instructions

  1. Preheat oven to 325 degrees. Grease and flour an 8?x 4?x 2? loaf pan. In a large bowl, cream butter with a hand mixer. Add 1 cup of sugar and lemon zest. Beat until fluffy. Add eggs one at a time. Cream well. Sift dry ingredients together. Add to wet ingredients along with the milk. Mix well. Pour batter into the pan and bake for 1 hour or until a tooth pick comes out clean.
  2. Glaze- Add 1/4 cup of sugar with the juice from the other lemon to a boiler on low heat mix until sugar dissolves. Mix well. Pour over warm cake and let cake remain in the pain for 5 minutes. Remove from pan and let cool completely.
