When it comes to a meal, the men in my house feel they have been short changed if meat and potatoes are not on the menu. Forget the healthy veggies; as long as pork chops and taters are plated, they are satisfied. I like to eat a full balanced meal with greens, grains, fruit and herbs, so I force my preference on them by coaxing them into eating a fork full of something nutritious along with all that starch and protein. Don’t get me wrong,  I’m not oppose to a well-seasoned chop and creamy mashed potatoes, but I feel a little less guilty when there’s a pretty green spot on my plate. Here is my famous mashed potato recipe. There’s really nothing fame about a few potatoes, butter and cream but I thought I’d elevate them with a few choice words.

Ingredients:

6 medium to large golden potatoes, skin on
1 1/2 stick of butter
1/2 cup whipping cream(more for creamier potatoes)
1tsp. salt(extra to taste)
1 tsp. white pepper(extra to taste)

Directions:
Clean potatoes with cold water. Place potatoes in a large pot filled with water. Cook on medium heat until potatoes are soft and tender. Remove pot and drain water. Remove the skins, using water from the faucet to cool off the potatoes. Place potatoes in a large mixing bowl; break potatoes up with a fork. Add the butter to the hot potatoes and mix to melt the butter. Add salt, pepper and cream. Blend with a hand mixer until potatoes are creamy. Add additional salt and pepper to taste. For creamier potatoes add more cream.
