The grill master, aka my hubby, takes pride in his title of being a grill aficionado, when it comes to poke (pork) ribs and steaks on the grill. This title was passed down from his mama, who was the grill matron of their family. Ms. Matthews didn’t mind boasting about her grill skills. When Ms. Matthews was around, she took a director’s chair by the pit to make sure the meat was straight and no one, challenged her domain.

Nieces, nephews and cousins would call the grill matron for her BBQ tips before firing up their grill. Being from Memphis, TN, the birthplace of the two B’s. BB King and BBQ, this lady developed a secret to bbqing that Donald duplicates today and I thank her because it’s a hot messy job and I don’t know the first thing about grilling. My job is to make sure Donald doesn’t burn the meat. I’m sure you’re thinking…how does that happen? Well, the hubs has a habit of leaving his grill position for a seat in front of the T.V. which is located in his man cave under the cool breeze of the A/C.
First; the official close of the eyelids and shortly thereafter, a loud repeated noise which cannot be mistaken for anything other than a snore; leaving the grill to having its way with the meat. To prevent this disaster and assure the grill is guarded, we installed a T.V. on the patio. “No More Burned BBQ.”

Ingredients:

4 steaks medium cut (Donald used Kansas City style) we love T-bones $$$$
Salt and Pepper and your favorite seasonings.
Beer to marinate

Directions:
Season the steaks with salt, pepper and your favorite seasonings. Marinate the steaks in beer for a few hours in the fridge. Remove the steaks and let rest for 30 minutes to take the chill off. Place the steaks on a hot grill (Donald used charcoal)
Grill for 8-10 minutes on each side. We like medium to medium well.
