When I think of the dreaded cold winter days and nights, only one thing comforts me; a big bowl of homemade Beef Stew.

Stews and soups warm you from the inside out and they are so satisfying not to mention cheap to make and feed a clan. A big hot bowl of hot liquid yum and a buttery cornbread muffin to “sop” up some of the juices…that’s southern comfort to me! Okay that may be a bit too southern for you but we say “sop” in the south. I know we are known for making up our own words but not sop!

Definition: sop (Merriam-Webster)
noun– a piece of bread dipped in gravy, soup, or sauce..

verb-soak up liquid using an absorbent substance; “he used some bread to sop up the sauce”

Pull out your Dutch oven and get your Beef Stew steaming, after all, we still have 34 more days until the first day of spring.

Beef Stew For The Soul

Ingredients

  • 1/2 pounds beef chuck, round steak, or stew meat cut in cubes
  • 1/3 cup flour divided
  • 1 large onion, chopped
  • 1 1/2 tsp salt
  • 1 1/2 tsp black pepper
  • 2 tbsp. oil (olive oil)
  • 7 cups beef broth or bouillon cube equivalent
  • 4 cups carrots, peeled and chopped
  • 8 red potatoes, peeled and cubed
  • 3/4 cup flour
  • 1/2 cup water
  • 1 tbsp. browning and seasoning sauce (Kitchen Bouquet)
  • 1/2 cup celery chopped
  • ½ cup bell pepper chopped

Instructions

  1. Step 1
  2. In a large bowl, Sprinkle meat with half of the 1/3 flour and toss to coat evenly.
  3. Step 2
  4. Heat oil in large saucepan or Dutch oven over medium heat. Add, onions, sauté until translucent. Add meat, celery, bell pepper, salt and black pepper and the remainder of the 1/3 cup of flour, stir and cook until meat has browned. You may have to drizzle a little oil while browning the meat. If needed, pour a small amount of beef broth into the pot to de-glaze. Add the beef broth and bring to a boil. Reduce heat, cover and simmer 20 minutes.
  5. Step 3
  6. Add the carrots and the potatoes to the stew (add more water if needed.). Simmer covered for 1 hour or until potatoes and carrots are cooked thoroughly.
  7. Step 4
  8. In a small bowl, whisk together the flour and water until the mixture is smooth. Add slowly to the stew stirring constantly. Continue cooking uncovered until meat is tender.
  9. Step 5
  10. Optional Method - After browning the meat, onions, celery and bell pepper, place all ingredients in a crock-pot and cook on low for 8 hours or on high for 4 hours.
