Well, it seems like my New Year has gotten off to a rocky start. If y’all have been following me on my insta stories, you’d think I just won the lotto with all the money I’ve been forking over lately.
Please allow me to climb on my soapbox and vent about what’s been going on in my world. Within a week, three major appliances have died on me. I know you guys are waiting to see the readers choice for best recipes in 2018 so I’ll share a few then get back to this appliance saga in a few.

My favorite fruit is a juicy peach so I experimented with adding peaches to grilled salmon to create a match made in heaven.

Back to the appliance frenzy. First, my microwave door wouldn’t open. The microwave is my hubbies best friend and when his food got stuck inside, all hell broke loose. He pried the door open to retrieve his food. Afterwards, the sweet sound it makes when your food is ready and the one my grand baby loves because he’s a lot like his Pop Pop, ceased to exist. #nomorezapping4me! Next, we loaded the dishwasher and pressed the start button…silence, no lights in sight. The dishwasher’s been acting up lately but we jiggle it and it starts working again. No such luck this time. Guys I’m not kidding, this nightmare is not over but here’s more recipes that made the cut.
No. 7 Fajita Chicken Casserole
This dish has all the goodness in a plate of fajitas without having to assemble them.
No. 6 Pumpkin Bread
I love making this bread during the fall and freezing a couple loaves to enjoy with my morning coffee.
No. 5 Deconstructed Strawberry Pie
No baking required. Just a trip to the freezer section at your local grocer and you’ve got dessert.
Once I finally wrapped my head around having to replace two appliances I thought a hot soothing shower was in order. I turned on the shower faucet hoping to walk into a nice steamy spa experience. Instead, I got frostbitten from the cold water. Ugh, the water heater had gone out!!!!! I wanted to cry but their was too much water already from the shower flow. I can live without a microwave and dishwasher because we have ovens and hands but I have to, got to, must and need hot water! Especially if I plan on making more delicious recipes like these.
